KimC's Delicious White Chili Soup!

This is fab. and since there's been very little posting on this site lately, here's KimC's recipe that is so tasty. It's just "appropriate" fall cooking. Eat it with corn muffins, chips and guac., or whatever sounds good at the moment.

Here it is:

Chicken (I think you could use baked/ cut up tofu as well, but I know chicken is great with it)
Milk
Bullion
Green chili peppers
Enchilada sauce w/ green chili peppers (it's the green sauce)
Ro-tel or whatever diced tomatos w/green chili peppers
Black beans (drained)

In a pot, make a base with flour, butter and chicken bullion (approx. 3 cubes and adequate amt. of water). Add milk.

Stir fry/cut up chicken (whatever amt. you want in the soup) with chili powder, cumin and salt/pepper.

Pour chicken in pot.

Keep it on low/medium heat.

Add large can of enchilada sauce, green chilis and tomatos.

'Simmah' and enjoy!

Addendum: add drained black beans to chili with the tomatos and enchilada sauce. :)
